The production of high-quality Extra Virgin Olive Oil is our main activity. With about 18,000 olive trees spread over approximately 50 hectares, all on the splendid coast of Montemurlo, we can boast of cultivating highly prized cultivars for their organoleptic value and extremely rich cultural heritage, having exclusively 3 NATIVE Cultivars PRESERVED AT THE CNR SEED BANK, specifically: LA BIANCA DI CICIGNANO, LA MORA DI CICIGNANO, IL FRANTOIANO DI MONTEMURLO. In addition, we also cultivate the classic Tuscan cultivars: Moraiolo, Frantoio, and Leccino. From their blend, following a precise harvesting scheme and never exceeding 4 HOURS from manual harvesting, our famous ORO VERDE is born.

At the moment we have about 20 hectares of organic arable fields where we rotate the sowing of our ancient grains: Verna, S. Capelli, Ruber, and Montemurlo spelt, the seeds of which have been passed down for generations on our farm.
In recent years, however, we have ventured into sowing ancient local legumes that unfortunately had fallen into disuse, and with some effort we are recovering them: Montemurlo chickpeas, Cannellino beans, Borlotto beans, and lentils.

Our chickens live outdoors in 4 chicken coops of about 5,000 sqm with only 250 hens per coop, which creates high quality eggs because our hens are HAPPY, free to eat the organic cereals we produce or whatever they find while foraging. When needed, we provide them with hemp seeds we produce ourselves, thus improving the continuity of production and the quality of the eggs, which absorb omega-3 and omega-8 from the hemp.

it is the meeting between our Organic Flours and the skilled hands of Silvia (my wife) who, depending on inspiration or orders, creates excellent potato or ricotta ravioli, tortellini, tagliatelle, cannelloni, etc....
Our dry pasta is made in a small artisanal pasta factory in the Lucchesia area, where we deliver our organic flours into the skilled hands of the master pasta maker, who has extensive experience working with spelt flour. This is how our whole spelt and Montemurlo durum wheat pasta is born, which has been immediately appreciated for its excellent flavor and the high digestibility typical of ancient grains processed by hand. Then, to meet the needs of our customers, we also started producing a line of white pasta made only with Montemurlo durum wheat, which stands out for its delicate taste while maintaining the excellent digestibility of the S. Cappelli wheat from which Montemurlo durum wheat originates.
Our mill is entirely built from red pine wood, which, thanks to its natural resins, is bactericidal without the need for chemical additives. It has 2 lava stones and a sifter, from which we produce Type 0 - Type 1 - Type 2 flours - Bran, or, by excluding the sifter, Wholemeal flour.

, another member of the supply chain. Then we also experimented with
Zazuca
beer with our grains and especially hemp.


We have agreements with the ASL of Prato and various Social Cooperatives with whom we have been collaborating continuously for several years.
